Aloha Noodle Bowl

This nourishing noodle bowl is fresh, delicious and packed with nutrients. It is the perfect savoury dish if your looking for a light and healthy meal.

Ingredients:

  • 1 serving rice noodles

  • 2 tsp of Unicorn Superfoods Ocean Blend

  • Broccoli and brussel sprouts

  • Shredded carrots  

  • 50g Silken tofu

  • 1/4 cup shelled edamame

  • Handfuls of roasted nuts

  • Optional: Your favourite chips for some crunch

  • Ginger sesame dressing:

  • 1 tbsp tahini

  • 2 tsp warm water to thin

  • 1 tsp toasted sesame oil

  • 1 tsp grated fresh ginger

  • 1 tsp soy sauce

  • 1.5 tsp maple or honey

Method:

  1. Cook rice noodles according to the packet instructions with 2 tsps of the Ocean Blend.
  2. Pan fry broccoli and brussel sprouts with oil and tamari or soy sauce.
  3. Shred carrots and set aside.
  4. Dice silken tofu into cubes.
  5. For the dressing add 1 tbsp tahini with 2 tsp of warm water to create a thinner consistency in the paste. Add 1 tsp toasted sesame oil, 1 tsp grated fresh ginger, 1 tsp soy sauce and 1.5 tsp maple or honey. Stir until the dressing is consistent.
  6. Add all ingredients into a bowl and top with the dressing and your favourite chips for crunch.
