Espresso Protein Choc Chip Banana Bread

Your holiday energy boost! A festive banana bread infused with espresso, choc chips and protein to keep you fueled through the Christmas rush.

You will need:

Method:

  1. Preheat the oven to 180°C and line a loaf tin with parchment paper.
  2. Mash the bananas in a large mixing bowl.
  3. Melt the coconut oil in the microwave for 30 seconds or until fully liquid.
  4. Add the melted coconut oil and cooled espresso to the bananas, then whisk to combine.
  5. Add the caster sugar, vanilla cake plant protein powder, self-raising flour, baking powder, and bicarbonate of soda, then mix until combined.
  6. Fold most of the chocolate chips into the mixture.
  7. Pour the mixture into the prepared loaf tin and sprinkle the remaining chocolate chips on top.
  8. Bake for 1 hour, checking doneness with a skewer — it should come out clean. If not, bake a few more minutes.
  9. Allow to cool completely before slicing.
