Your holiday energy boost! A festive banana bread infused with espresso, choc chips and protein to keep you fueled through the Christmas rush.

Method:
- Preheat the oven to 180°C and line a loaf tin with parchment paper.
- Mash the bananas in a large mixing bowl.
- Melt the coconut oil in the microwave for 30 seconds or until fully liquid.
- Add the melted coconut oil and cooled espresso to the bananas, then whisk to combine.
- Add the caster sugar, vanilla cake plant protein powder, self-raising flour, baking powder, and bicarbonate of soda, then mix until combined.
- Fold most of the chocolate chips into the mixture.
- Pour the mixture into the prepared loaf tin and sprinkle the remaining chocolate chips on top.
- Bake for 1 hour, checking doneness with a skewer — it should come out clean. If not, bake a few more minutes.
- Allow to cool completely before slicing.
