Christmas Sugar Cookie Protein Bars
All the nostalgic flavours of Christmas sugar cookies, packed into a nourishing high-protein bar. Sweet, festive and perfect for gifting or snacking. A no-bake, high-protein take on a classic sugar cookie.
Base:
- 1 cup almond meal
- 1/2 cup vanilla protein powder
- 1/4 cup honey or maple syrup
- 1/4 cup nut butter
Top layer:
- 50g white chocolate
- 1 tsp Unicorn Superfoods Pink Pitaya Powder
- 1 crushed candy cane or sprinkles (optional)
Method:
Base:
- Add the almond meal and vanilla protein powder to a mixing bowl and stir to combine.
- Add the honey or maple syrup and nut butter, then mix until a thick dough forms.
- Press the mixture firmly into a lined square or rectangular dish, smoothing the top.
- Place in the fridge while you prepare the top layer.
Top Layer:
- Melt the white chocolate using a microwave or double boiler.
- Stir in the Unicorn Superfoods Pink Pitaya Powder until the colour is evenly combined.
- Pour the mixture over the chilled base and spread evenly.
- Sprinkle crushed candy cane or sprinkles on top, if desired.
- Refrigerate until set, then slice into bars.
