Unicorn Chia Pudding and Yoghurt Parfaits
Mango chia pudding for 3-4 servings:
– 400g (about 3 dl) vegan yoghurt with mango flavour
– 100ml plant-based milk
– 100g chia seeds
- Mix chia pudding ingredients and place into 3 jars and then store in the fridge at least for 2 hours before serving.
- For the Unicorn Layers follow the below measurements:
- Mix 250g vegan yoghurt with vanilla flavour + 1/2-1 tsp Unicorn Superfoods Beetroot Powder
- Mix 250g vegan yoghurt with vanilla flavour + 1/2-1 tsp Unicorn Superfoods Blue Spirulina
- Mix 250g vegan yoghurt with vanilla flavour + 1/2-1 tsp Unicorn Superfoods Matcha
- Top the chia jars with each unicorn coloured layer.
- Add raspberries and granola and enjoy!
Blue Spirulina Oat Latte

Blue Spirulina Oat Latte
- 1/2 cup oat milk
- 1 tsp blue spirulina powder
- 1 tsp maple syrup
- 4 tsp boiling water
- Add the blue spirulina, maple syrup and boiling water to a mug and stir until well combined.
- Froth up the oat milk in a milk frother and once the milk is the right consistency add to your mug.
Blue Spirulina Pancakes

Blue Spirulina Pancakes
- 100g gluten free flour
- 150ml water or almond milk
- 2 tsp Blue Spirulina
- 1/2 - 1tsp organic cinnamon
- 1 tsp baking powder
- Stevia with vanilla or 1/4 mashed ripe banana
- A bit of organic coconut oil for the pan
- Start mixing dry ingredients and then add water/almond milk and sweetener.
- Your pancake is ready for a flip once small bubbles will show.
- Stack your pancakes with slices of organic ripe banana in between.
- Top with your fave toppings, enjoy!

Blue Spirulina Smoothie Bowls
- 3 frozen bananas
- 1/2 tsp Blue Spirulina
- 1 tbs vegan protein powder (optional)
- Splash of nut milk
- Add all ingredients in a blender then blend until combined.
- Pour smoothie mixture into a bowl and decorate your smoothie bowl with fruit, granola, coconut, nuts and toppings and enjoy!
