White Chocolate Matcha Cookies
If you’re a matcha lover, then you’ve got to try these cookies. The matcha flavour pairs so well with white chocolate. 🤩 These are a perfect small batch dessert as they serve 6 rather than my usual cookie recipe that serves 12 🤍
Ingredients:
-60g dairy free butter
- 40g light brown sugar
- 55g caster sugar
- 1 tsp vanilla extract
- 1 flax egg (1 tbsp flaxseeds + 3 tbsp water)
- 125g plain flour
- 1/2 tsp baking powder
- 1/4 tsp bicarbonate of soda
- 1 tbsp @unicornsuperfoods matcha
- 140g dairy free white chocolate
Method:

1. Preheat the oven to 180C and line a baking tray with parchment paper.
2. Combine the dairy free butter, brown sugar and caster sugar in a bowl.
3. Add the flax egg and vanilla extract and mix again.
4. Add the plain flour, baking powder, bicarbonate of soda and matcha to the bowl and mix until you form a cookie dough.
5. Chop the white chocolate into small chunks and fold them into the mixture (saving a few to top the cookies with later).
6. Divide the mixture into 6 balls and place them on the baking tray, spacing them out as they will grow while baking.
7. Place the cookies in the oven for 15 minutes.
8. Once you remove the cookies from the oven they will still be very soft, but they will harden as they cool.
9. Top the cookies with the remaining white chocolate and enjoy!
