Unicorn Protein Pancakes

Ingredients for pancakes:
1/2 cup of almond meal
1/2 cup of buckwheat flour
2 tbsp vegan protein powder
2 flax eggs or non vegan option 2 eggs
2 tbsp of coconut sugar or 30g sweetner of choice
a pinch of salt
1/2 tsp of baking powder
1 tsp of vanilla essence
2 tbsp Pink Pitaya Powder
1/2 cup milk of your choice
Toppings:
Blueberries
Coconut yoghurt - we used Coyo's vanilla yoghurt
Unicorn Superfoods Blue Spirulina Powder
Nuts, seeds and shredded coconut 
Method:
1. Add all dry ingredients to a bowl
2. Add wet ingredients to the bowl and mix thoroughly
3. Add Pink Pitaya powder to mixture 
4. Add pancake mixture to the pan
5. Add 3-4 tablespoons of coconut yoghurt to a bowl and mix 1/2 - 1 tsp of Blue Spirulina powder until well combined
6. Add your favourite toppings and enjoy!
