Beetroot and Black Goji Protein Waffles


  • 1 cup of Gluten free Flour
  • ½ cup of Almond Flour
  • ½ tsp Cinnamon
  • 2 tbsp coconut sugar or 2 tbsp maple syrup
  • 1 tsp baking powder
  • 2 tbsp protein powder
  • 2 eggs (vegan option: substitute for flax eggs or 2 bananas)
  • 1 cup almond milk
  • 2 tbsp coconut oil
  • 1 tbsp Black Goji Powder
  • 1 tbsp Beetroot Powder


  • Mix all dry ingredients together in a bowl and set aside
  • Whisk eggs and sugar/maple syrup then add milk and coconut oil
  • Slowly whisk in the dry ingredients until well combined
  • Let the batter sit in the bowl for 10 mins before you start cooking.
  • Split the batter into two bowls then add Beetroot Powder in one bowl and Black Goji Powder in another bowl then mix until colour spreads right through the mixture.
